So, maybe you got a new Keurig® brewer over the holidays. Or maybe you’ve had a brewer for years. Train Station Visitors from Colombia

Aurora Maria Izquierdo Torresis and Jorge Edgar Paez Izquierdo visit us from Colombia

We had two very special visitors come to the Train Station in October.

Accompanied by Winston, Aurora Maria Izquierdo Torresis and Jorge Edgar Paez Izquierdo came to visit us from Colombia. They’re both from the ASOANEI cooperative. Aurora is the general manager and Jorge is the sales manager.

We had our Colombian Fair Trade Select coffee on brew.  This classically balanced single origin coffee originates from their farms. Our customers had the privilege to be served coffee by both Aurora and Jorge. As Jorge expressed it, they were proud to be serving the “best coffee.” It was a true tree-to-cup experience!

The Train Station staff really looks forward to meeting and sharing other members of our many fair trade partnerships in the future!

Ask the Coffee Lab: How Do You Know When Coffee Is Good?

“When you at Green Mountain buy coffee to roast, how do you know it’s going to taste good?”


We drink a lot of coffee here as part of our jobs. And even better, we get paid to drink and then evaluate it. Even though a lot of evaluating any beverage you drink for pleasure is subjective, there are still some objective ways to judge coffee for purchase. By the way, I should explain: I'm talking about the Coffee Department in Waterbury, Vermont, where we shop for and buy the millions of pounds of green coffee that we then roast and package and ship all around the United States and Canada.

We can't taste every single pound of coffee we buy (though that would be fun), but we do taste a lot. And when I say taste, I'm really talking about cupping, which is the professional version of tasting. (Want to know more about cupping and slurping, go here: “Why slurp?”).

We buy coffee by the container, which is the big metal box you see on large shipping vessels. Generally speaking, you can put about 42,000 pounds of green coffee in one container. When we evaluate that lot of coffee, the seller sends us a composite sample from that huge pile of green coffee. A few beans from this bag, a few from that bag, a few from that bag over there, until we have one pound of green coffee ready for us to roast and cup.

Before we roast it, however, we measure how wet or dry the coffee is in terms of moisture level. If it comes in too wet, it might not have been properly dried at origin, or maybe it got wet on the boat ride over the ocean. If it's too dry, it might be old coffee. We still cup it, but that's an example of an objective way to evaluate coffee.

We do a visual inspection of each sample as well. It should generally be a uniform color and size, without foreign material, bits of stone, twigs, and beans with insect damage (among other issues.) Even if a sample looks sub optimal, we still cup it, but note the state of the sample. Some coffees look beautiful, but don't taste that great while some coffees don't look so great but taste amazing.

Penny Raymond in our Coffee LabWe roast the samples ourselves so that we can control that important stage. And then the real proof is in the cup. We use the Specialty Coffee Assosication of America cupping sheet to tally our scores, average up the scores and then decide if the coffee passed the grade or not. The cupping sheet lets you score based on fragrance/aroma, flavor, acidity, body, aftertaste, balance, uniformity, clean cup, sweetness, and then there are ways to score defects and taints in the coffee as well. If it seems like a lot to keep track of, after the first 1-2,000 samples, it gets easier. Our supply chain uses the same scoring system so that we can all communicate in the same language, in spite of everyone speaking so many different languages.

We like metrics here and so we keep track of a lot of our activities:

  • I can tell you that I have cupped 3,779 samples of coffee this year.
  • For every sample (1 sample represents a container), we put out 6 cups of brewed coffee to evaluate. So in the past 12 months, I have "put a spoon" in 45,348 different cups of coffee.
  • Two of my coworkers, Brent and Penny, cup more than I do (4,613 and 3,756 respectively).

So, if you ask how we know if the coffee will taste good, it's because we drink so much of it. We drink the bad stuff so that you won't have to. On top of that, every sample that we cup was also cupped by the importer, by the exporter, and even by the co-op or farm. There are many, many ways for a coffee to shine or receal itseld as an imposter of great coffee.

Next time you have a nice cup of our coffee, don't forget how much work went into making it a nice cup of coffee, and also don't forget all the work that went into making sure it's not a bad cup of coffee.

Announcing the new Keurig® Vue™ Brewer

You may have heard, but today it was announced that the line of Keurig® Single Cup Brewers is expanding with the addition of the Keurig® Vue brewer, a premium new platform designed with the ability to brew stronger, brew bigger, and brew hotter.

  • Bigger Coffee:  I can now brew into my large, stainless steel travel mug with new Vue packs specially formulated to brew a bigger cup up to 18-oz.  I’m ready to fill my travel mug with a strong cup of my favorite Green Mountain Coffee® variety, Breakfast Blend.

Let’s Savor the Cup

Cupping coffees is one of the most unique aspects of our craft. When we “cup” coffees, we formally evaluate their qualities using very precise sensory criteria. But cupping is not just the realm of coffee experts. You can use some of the same techniques when judging your morning brew. Here’s how:

    Single Coffee Cup
  1. Breathe deep. If you have a bagged coffee, smell the ground coffee before it’s brewed. The fragrance speaks volumes about the coffee’s origin and the care of its processing.
  2. Brew. Breathe deep again. The aroma of brewed coffee also varies dramatically from origin to origin. Coffee can be: woodsy, earthy, citrusy, fruity, smoky, or nutty.
  3. Take a sip. Is it bright? This pleasing tang on the tongue is acidity. (Remember: Acidity does not refer to the PH level of the coffee.)
  4. Take another sip. Is the coffee earthy, nutty, fruity, toasty? There is huge diversity in the flavor of coffee from region to region, or even within a specific region. Try a few different blends or regions and see for yourself!
  5. And another sip. How does the coffee feel? What is its weight or texture? Full-bodied coffees may be buttery or even syrupy. Light-bodied coffees are more tea-like.
  6. Now you’re really starting to enjoy the coffee. How does each sip finish? The sensations that remain in the mouth when the coffee is gone are the finish, or aftertaste. Some coffees impart a sweet, lingering finish; others are more direct, even abrupt.

Before you know it, a full cup has elapsed, and you’ve been immersed in the wonderful wealth of sensoral information held within a single cup. Think about that coffee’s balance, how all of its individual flavors and taste sensations come together. Great coffees are balanced – great coffees have a whole composition that is greater than the sum of its parts.

So go ahead – savor your cup of coffee.  We’ll be right there with you.

Roger: Have you ever had one of those moments of wonder? The kinds when the whole world seems to slow down just long enough for you to appreciate it. And then for that instant, that single speck in time, nothing else matters – no stress, no worry, no frets. The other day when I was walking to work I had one of those moments. It was a beautiful morning and the sun was dancing on the autumnally punctuated mountains that surround us. The air was crisp but not cold. The colors of the sky, the clouds, and the hillsides were spot on. Even the birds’ songs seemed to lilt just a bit brighter, carrying on the breeze just a second longer than the physics of sound would normally allow. The moment literally stopped me in my tracks. I chuckled to myself while taking it all in. Mary Beth J.: I am new to Green Mountain Coffee Roasters, Inc. this year and have found that I have a lot that I am thankful for:



  • Bringing my personal passion into work each day

  • New opportunities and experiences

  • A new appreciation for the coffee industry and an endless supply of caffeine

  • Having coworkers who patiently waited while I got back on my feet, literally, and cheered me on along the way after having only known me for a few weeks



Colleen: I am thankful that I trusted my heart and moved from New York City to Vermont!  Now I have a fiancé that I adore, a dream job at a company I admire, and a world of outdoor adventures at my doorstep!

Jen:  I am thankful for my awesome network of friends who never fail to support me and keep me going!  And that Donovan McNabb is no longer the starting quarterback for the Vikings! ;)

Derek: I am thankful for many things, but among them: I am thankful that great, interesting music is still being made today.  I’m thankful that the Flatlander Barbecue team didn’t fall flat on our face during our first year of competitive barbecue.  I’m thankful to work for a company with so many opportunities and to have the ability to work on such an amazing brand.  And I’m thankful that my wife and I get to live in the beautiful state of Vermont – more often than not, my morning commute is just breathtaking.

Kristen:  It’s been one of those years, folks.  You know: The kind of year that brings just as many challenges as it does rewards?  But man, are those rewards all the sweeter because of the hurdles it took to get them.  And those rewards are: Superior coworkers – the kind that will deal with you reverse trick-or-treating around campus in costume or frolicking down the halls of Cubeland; loving family – those that will pick you up at the airport after an event so late in the night it’s early in the morning; and hilarious, dedicated friends – the ones that roll their eyes when you tell them they’re all getting coffee for Christmas for year number three and then merrily chug every morsel of caffeinated goodness.

Tom:  My family lore has it that we're descended from the pilgrims John Howland and Elizabeth Tilley. Howland was swept off the deck of the Mayflower in a storm -- but saved by a rope thrown overboard. So I'm definitely thankful for that rescue. Otherwise I wouldn't even be here! (I am also secretly grateful for the cranberry sauce shaped just like the can it comes out of. With three kids, there's always some of that on our Thanksgiving table, alongside the more wholesome, natural whole-berry stuff.)

Doug: I'm thankful for wool socks, the heavy kind, all sheepy soft on the inside and thick enough to ward off evening chills. I'm thankful for autumn bonfires, and friends to share them with. Marshmallows, toasted just so. And I'm exceptionally thankful for a job with an amazing company that has in so many ways exceeded my expectations about what a group of committed people can do. I mean — it's a job, right? In this economy that's enough, and it affords me many of the other things I'm thankful for. But working here has enriched me as a human being, too. Who'd have expected that? So, thanks. And don't forget… wool socks: awesome.

Dry Socks, Full Belly, Fresh Coffee

It is difficult for those of us who have not served to understand what that act means. The Vincent Jones - 1945 Camp Lucky Strike Franceexperience is non-transferrable – something we can read about, hear stories, watch the news on, but only those who have been there can know.

Until recently, after his passing, I did not know how much being a Veteran meant to my 91-year-old Great Uncle Vinnie. He served in the U.S. Army Infantry 89th Division under General Patton. He fought in the Battle of the Bulge and was also part of the first wave of infantry men to liberate Dauchen, the first concentration camp to be entered by the Allied Forces. Until days before his passing, he served as Secretary and Treasurer of his local American Legion.

He was a jovial man – always laughing, dancing and loving life. If you really knew him though you knew he carried the memories of his service with him always – though he didn’t show the shock and trauma he had experienced outwardly. He appreciated the comforts of home – dry socks, a full belly, and a hot cup of coffee (he never refused a meal, even if he had just eaten, or a cup of freshly brewed coffee).

Knowing this about him and his time in the service, I’m proud to know our coffee and brewers areTroops at Holy Joe's Green Mountain Coffee Station providing that comfort to many of our service women and men.

While abroad, soldiers stationed in Iraq and Afghanistan can visit one of Holy Joe’s Cafes to sip fresh Green Mountain Coffee and relax with their fellow servicemen. So far, we’ve sent over 13,500 lbs of bagged coffee and over 9 million K-Cup Portion Packs.

And at their deployment and arrival home we work with Pease Greeters at the PortsmouthPease Greeters at Troop Deployment 10-26-11International Airport at Pease, NH to provide a warm farewell and welcome home. We provide coffee (around 1,000 cups per month!) and Keurig Single-Cup Brewers so that great coffee, freshly brewed is available to the troops as they pass through the airport. Food, gifts and ceremony are all part of the Pease Greeters send-offs and welcome-backs.

For those of you who have served, we thank you for your sacrifice both during and after your service. We wish all of you the comforts of home on this Veteran’s Day – warm socks, a full belly and certainly great coffee!

My Favorite Fair Trade Certified Coffee: Kenyan Highland Cooperatives Single Origin

My favorite Fair Trade Certified™ coffee is our Single Origin Kenyan Highland Cooperatives.

I'm long a gobsmacked and loyal fan of the coffees of Kenya. Few origins offer the bright, zingy POW that's the hallmark of these East African coffees. Few have such stunning, and stunningly intense fragrances and flavors -- or such a decadent range of them! Few origins invariably cup as refreshingly clean, un-muddled by ferment or defect or under- or over-ripe fruit; qualities that result from exacting and uncompromising work at collective coffee mills. Our Highland Cooperatives is no exception, bursting with grapefruit-toned brightness, and lip-smacking flavors of tart blackberry and black tea, bergamot and burgundy.

It's grown by members of the Rumukia Farmers Cooperative Society, a group of smallholder farmers in Kenya's Nyeri district, a region with a remarkable microclimate — a temperate zone with regular, seasonal rainfall that's proven ideal for growing quality coffee in Eastern Kenya. Every bit as remarkable, the cooperative has a reputation for fair dealings with their member farmers, and for being excellent stewards of their land.

Only recently has it been possible to integrate Fair Trade practices into Kenya's traditional auction system, creating a thread of transparency between coffee farming cooperatives and mills, and international markets. It remains a tenuous line, at best. Political disarray in Kenya threatens the auction process, and farming cooperatives face tremendous pressure to increase yields over quality. While still a very young program, Fair Trade pricing and support for member communities in Kenya is working to bolster small-holder farmer cooperatives like Rumukia, and I hope to see still more excellent, Fair Trade Certified Kenya coffee producers.

Fair Trade Pumpkin Spice Coffee Cupcake Recipe

Amber of Bluebonnets & Brownies is back for her Fall coffee-inspired recipe!  And I only need four words to introduce her latest recipe: Fair Trade Pumpkin Spice!

This is the recipe I've been waiting all year to write. Recently, a promotional email from Green Mountain Coffee® went out. The subject line? "Pumpkin Spice is Here!". The text of the message? "Some people wait all year for this."

Yeah. I fully admit it. I'm pretty sure I inspired that marketing genius. Because I do. I wait all year. Or, actually, I try not to wait all year. I try to buy as many Pumpkin Spice K-Cup® portion packs as I can get my grubby little hands on, and then I hoard them, rationing myself to 2 (okay, 3) cups a day, praying that they'll last through to August.

It never works out. I just can't get enough of the Fair Trade Pumpkin Spice coffee.

Two years ago, my husband added fuel to the fire, buying me a Keurig Milk Frother for our anniversary. In November.

Autumn + Pumpkin Spice + Milk Frother = one jittery recipe writer full of Pumpkin Spice Lattes, my friends. I don't regret a single cup.


I knew we had to go sweet for this recipe. Our last recipe was savory, Island Coconut Chicken Curry, if you remember. But there's really only one direction you want to go when it comes to pumpkin and spice and everything nice - and that's straight down Sugar Lane.

 

The first recipe I ever had featured on Green Mountain Café was a chocolate mayonnaise cake. A recipe near and dear to my heart because it was my grandfather's. It relies heavily on strong coffee for its signature flavor, and so I wondered, how would a Spice Cake with a coffee and mayonnaise base be?

If the email I received from my husband's coworker this morning is anything to go by, not only does this cake work, the combination of the coffee-base and Pumpkin Spice coffee infused buttercream are, and I quote, "like manna from the Gods". (He often foists the extras of my creations off on his co-workers - it's actually made him quite popular!)

I hope that you enjoy Pumpkin Spice coffee, and Pumpkin Spice Cupcakes, as much as I have. They both embody everything I have come to love about the Fall: cozy comfort, inviting warmth, and enticing aromas.

Pumpkin Spice Coffee Cupcakes

makes 16-18

Ingredients

2 1/2 cups All Purpose Flour
1 cup packed Brown Sugar
1/4 teaspoon Salt
2 teaspoons Baking Soda
1 teaspoon Cinnamon
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Ground Cloves
1/4 teaspoon Ground Ginger
1/2 teaspoon All Spice

1 cup Mayonnaise - no substitutes!
1 cup (8 oz) Green Mountain Coffee Fair Trade Pumpkin Spice Coffee, cooled
2 teaspoons Pure Vanilla Extract

Directions

Preheat oven to 350F.

In a large bowl, combine flour, brown sugar, salt, baking soda, cinnamon, nutmeg, cloves, ginger, and all spice. Stir completely with a wire whisk - this will allow the ingredients to distribute evenly and also aerate.

In a smaller bowl, combine mayonnaise, coffee, and vanilla extract. Whisk as well, until ingredients are well mixed.

Stir wet ingredients into dry, mixing completely to make batter.

Line 12 count muffin tins with paper liners, or spray with cooking spray. Using a 1/4 cup measure, scoop batter into each muffin well. You should end up with exactly 18 cupcakes if you use the 1/4 cup measure.

Bake for 25-30 minutes, until a toothpick inserted into a cupcake removes cleanly. Allow to cool completely before frosting.

Pumpkin Spice Coffee Buttercream Frosting

Ingredients
1 cup (2 sticks) salted butter, softened to room temperature
4 cups powdered sugar
3 tablespoons cold Green Mountain Coffee Fair Trade Pumpkin Spice Coffee
1 teaspoon Pure Vanilla Extract
1 tablespoon Pumpkin Pie Spice

Directions
In a stand mixer, or using a hand mixer, cream butter until it is light and fluffy - 4-10 minutes at least. Add powdered sugar, 1 cup at a time, mixing well after each addition. Add coffee one tablespoon at a time, mixing again after each addition, and then vanilla and pumpkin pie spice.

My kitchen was very warm, so my icing seemed a bit too soft at this point. I refrigerated it to stiffen it up, and then re-mixed it when I was ready to frost my cupcakes. If after refrigeration the frosting seems too stiff, add 1 tablespoon of half and half and mix well again with your mixer. Alternate between tablespoons of half and half and Pumpkin Spice Coffee until frosting reaches your desired consistency.

Cupcakes and frosting will keep in an airtight container in the refrigerator for up to 3 days.

Happy Administrative Professionals Day: We Couldn't Do It Without You!

Business Coffee Express would like to take the time to commemorate Administrative Professionals Day® not just because it is usually the office managers, secretaries, and administrative assistants who are in charge of ordering our coffees and selecting their office's Keurig® single-cup brewer, but because at Green Mountain Coffee, as in most workplaces, they are the backbone of the organization (and some of our favorite people, too).

Since 1952, the International Association of Administrative Professionals (IAAP) has honored office workers by sponsoring Administrative Professionals Week (April 24-30
this year). Outside of employee birthdays and major holidays, it is one of the largest workplace observances.   The event is now celebrated worldwide, bringing together millions of people for community events, educational seminars and individual corporate activities recognizing support staff.

For the 2011 celebration, the theme is, "This year, celebrate all office professionals." The recession has hit everyone in the office and forced all of us to pull together and work harder, so the IAAP encourages us to recognize the hard work and sacrifice from everyone and celebrate all Office Pros.

According to the IAAP, administrative professionals are one of the largest segments of the office workforce. Here are some fast facts:
