Getting Ready for a Potluck – Big Summer Style

Who doesn’t love a potluck?

It’s the trifecta of good things: Friends, mingling, and great food – the signature items that you bring plus a slew of dishes you’d have never thought to make yourself.  A buffet of creativity that you get to enjoy with your best buds.  Win, win, win all around.

Those are just some of the reasons why we’re excitedly packing our bags for this weekend’s Big Summer Potluck, an annual gathering of food lovers put on by The Ivory Hut and Three Many Cooks.  It’s three days jam-packed with schmoozing with old and new friends, workshops galore, and of course, dishes from some of the best cooks around – the hosts and attendees!  Some of our very own K-Cup® Ambassadors will even be on the ground, taking the weekend in for all its foodie worth and sharing the K-Cup® love.    

So, what does a coffee company bring to a potluck?  We do have a lot of spectacular recipes using Green Mountain Coffee® varieties thanks to Bluebonnets & Brownies, so we have some options.

Fair Trade Island Coconut Cookie Recipe

I don't know about the rest of you, but sometimes there's nothing better with a hot cup of coffee than a cookie. A really great cookie, where every bite offers a surprise. A crispy outer texture and a chewy middle are also must-haves. This is what I wanted when I started thinking about today's recipe featuring Green Mountain Coffee®Fair Trade Island Coconut® Coffee. Island Coconut is one of my favorite Green Mountain Coffee seasonal flavors, second only to Fair Trade Pumpkin Spice (which, from me, love springs eternal). I dare say Island Coconut is my husband's favorite Green Mountain flavor, period. I was inspired to create a cookie that you would love, but also that he would adore, given it's his favorite flavor.

Fair Trade Island Coconut Cookies by Bluebonnets & Brownies

 

I gathered as many coconutty mix-ins as I could, and even went so far as to separate the Almond Joy Pieces - think M&Ms with toasted coconut and almond inside - by color, only adding the brown and cream colored candies. (There may have been discussion of my OCD behaviors as I separated out the blue candies from the brown and cream.) You coconut lovers are going to really enjoy that Fair Trade Island Coconut Coffee makes an appearance in both the cookies and a yummy glaze for the top. Don't skip the glaze! It's so easy to make, and really adds something special to your afternoon coffee break.

As you read the recipe, you'll notice that I say to refrigerate the cookie dough for at least 20 minutes. This is a recommendation I would make to you for any cookie dough, not just my recipe. Cookie dough bakes and tastes better if it is allowed to get cold again before baking. That's why those store-bought ready-made doughs taste so darn good and look so uniform when baking. Refrigerating your homemade cookie dough will get you the same delicious results. Let's just say if you place a plate of these next to the office Keurig®brewer, you're going to be everyone's favorite co-worker. I hope you love them as much as we did!

 

Fair Trade Island Coconut Cookies by Bluebonnets & Brownies

Island Coconut Cookies

makes approximately 32 large cookies

Ingredients

For the Cookies

4 cups all purpose flour
1 teaspoon kosher salt
2 teaspoons baking soda
1 cup quick cooking oats
1 1/2 cups of butter, melted (3 sticks)
1 cup granulated sugar
1 cup packed brown sugar
1 tablespoon vanilla extract
1/4 cup Fair Trade Island Coconut coffee
2 large eggs
1 cup Almond Joy Pieces
1 cup toasted angel flake coconut
1 cup cocoa dusted almonds, chopped

For the Glaze
1/4 cup Green Mountain Coffee Fair Trade Island Coconut coffee
3 tablespoons cream cheese
1 1/2 cups powdered sugar

Directions

For the Cookies

Preheat the oven to 350F.

Brew a cup of Green Mountain Fair Trade Island Coconut Coffee. Use the smallest setting your Keurig allows. I used my 4 oz setting. Allow the coffee to come to room temperature, placing in the refrigerator if necessary to speed up the process.

In a medium bowl, combine flour, kosher salt, baking soda and quick cooking oats. Use a whisk to combine the ingredients evenly and aerate the flour. Set aside.

When the oven is heated, place the angel flake coconut on a parchment lined baking sheet in an even layer and place in the oven. Bake for 7-12 minutes, checking often in the last 5 minutes of cooking. The coconut should toast to a spotty golden brown. Don't expect all of the coconut to change color.

Remove from the oven immediately if you see any pieces start to get dark brown. Turn the oven off again once toasted.

In the bowl of a food processor, place the cup of cocoa dusted almonds. Pulse repeatedly until the almonds are fairly small chunks.

In a medium bowl, combine the cooled coconut, cocoa dusted almond pieces and Almond Joy pieces. Mix by hand until evenly distributed, then set aside.

Melt the sticks of butter in a microwave safe bowl, then allow them to cool slightly. In the bowl of a stand mixer or a large mixing bowl, combine melted butter, both sugars, vanilla, and coffee. Mix on low until combined, then add the two eggs. Mix on medium speed for 3-4 minutes, until the mixture is light and fluffy.

Add flour mixture in increments, mixing on low after each addition. Scrape down the sides of the bowl before you add more flour each time. When flour mix is completely incorporated, add the toasted coconut mixture and mix on low or by hand until the mix-ins are well distributed.

Place the entire bowl of dough in the refrigerator for at least 20 minutes, though half an hour is better.

Preheat the oven to 375F.

Using a large cookie scoop, scoop 9 cookies at a time onto a parchment lined baking tray. Place the dough back in the refrigerator after you dish out each set of 9.

Bake for roughly 17 minutes, until the cookies are golden brown. Allow them to cool for a moment on the tray, then remove to a cooling rack and allow to cool completely before glazing.

 

For the Glaze

In the bowl of a mixer or small mixing bowl, combine coffee, powdered sugar, and cream cheese. Mix on medium high until the cream cheese has completely mixed in and the glaze becomes fairly thick. Add more powdered sugar if you would like the glaze to be thicker.

When the cookies are completely cool, spread them out on paper towel. Place the glaze in a frosting bag or ziptop bag. Seal the bag by twisting to remove all the air, pushing all the glaze into one sealed corner of the bag for piping. Cut a very small tip off the corner of the bag, then pipe glaze onto the cookies in any pattern you like (I did a criss-cross zig-zag). Allow the glaze to set for at least an hour, then place the cookies in an airtight container and store in the refrigerator for freshness. Serve alongside strong cups of Green Mountain Coffee Fair Trade Island Coconut coffee!

Ask the Coffee Lab: How Many Calories are in My Mug?

Coffee is non-nutritive, meaning it has no nutritional value. Being a studious fellow, I looked on our own website and verified that a typical 6-oz. serving of black, drip coffee has 2 calories. Which I may have just burned off typing this last sentence. Our flavored coffees like Fair Trade Island Coconut®? Free of calories and carbs. Brilliant!

Just remember: I'm talking black coffee. If you put sugar or honey in there, they add calories. If you put Organic Valley Half and Half in your coffee like I do, you can see the results when you go to the beach for the first time in July. Time for the 2%.

Of course, coffee does offer a number of trace minerals (Thiamin, Niacin, Folate, Phosphorus, Magnesium, Manganese) and is a good source of Potassium, Pantothenic Acid and Riboflavin.  Some even say that you are more likely to be friendly to other people if you have a hot cup of coffee in your hands. (There are a lot of friendly folks around our office – just saying).

Celebrate Fair Trade Month with a Fair Trade-Out

Today marks the first day of Fair Trade Month and the beginning of Green Mountain Coffee’s Fair Trade-Out campaign.  During the month of October, we’re encouraging coffee drinkers around the country to “trade-out” their daily cup of conventional coffee for a Fair Trade variety.

To celebrate the trade-out of two of our most popular blends – Our Blend and Vermont Country Blend® – to be Fair Trade Certified™, we’re giving away 2,500 samples a week of these Fair Trade coffees so you start to trade-out, too. The Bonnaroo Carbon Shredders are Back

The Bonnaroo Carbon Shredders are back at it again!  For the past three years, Green Mountain Coffee folks have trekked from Vermont to Manchester, Tennessee to teach music lovers at the Bonnaroo Music Festival how to reduce their Carbon Footprints.  We’re here again this year with support from Gardener’s Supply and Seventh Generation, which makes for a killer combination at Bonnaroo.

The Carbon Shredders started off with a muddy beginning yesterday due to the torrential Tennessee rain that night. Luckily, we had a beautiful day yesterday for the general gates to open. We've got a great group of people to help start the shred-olution this year! What a way to use your CAFE Time!

Our main focus this year is around promoting small behavioral changes that make an impact on energy use. Line drying your clothes on a clothesline is one way we're showing people how to save money and energy. Gardening cuts your energy use and brings back the connection to your local food systems.

This is only the first day but we've talked to over 200 Bonnaroovians about Carbon Shredders!  Can't wait to see what the next few days bring.

A Guy, a Girl, and the Right Cup of Coffee: An Engagement Story

A few weeks ago, hearts collectively turned into mush in our office while reading the abridged story of one Green Mountain Coffee fan’s proposal to his then girlfriend.  Imagine: Graham and Kate, our happy couple, in the early, early, early morning and the - well, why don’t I let Graham take it from here:

A good marriage proposal is all about circumstance, lighting, and a bit of luck...

Finding the perfect setting for my wedding proposal to my, then girlfriend, Kate was simple enough--we were on our way to Arizona to visit the Grand Canyon.  The timing took a bit more thinking.  I thought about a romantic mid-day picnic proposal.  It sounded great, but crowds would be a problem.  Sunset sounded dramatic and the colors and shadows cast in the canyon have inspired artists for centuries, but could I really carry around the ring for the entire day?  Neither seemed to fit the moment quite like sunrise.  The symbolism just seemed right.  Here we were at a new beginning, the first light of day lifting over the seemingly-infinite wonder before us--full of excitement and promise.  Perfect!

Ah, but there's always a catch.  Staying in Flagstaff meant a two-hour drive to the Grand Canyon, and with a 6:20 am sunrise, that meant leaving the hotel around four in the morning!  With a promise of a once-in-a-lifetime glimpse at sunrise over the landmark, Kate--thankfully--agreed to wake up at 3 am--whew!  Nerves gripped me--and I, the steering wheel--as we traced along the dark and elk-trodden roads of northern Arizona.  When we finally arrived, we had just enough time to run to the rim and find our way to a secluded point.

Describing the very moment is impossible.  The famous artists of the Wild West have brought out the emotions of the Canyon at first light, but not even the most talented among them could capture the glow that swept across Kate's face as I dropped to one knee. The moment will forever be painted in the most brilliantly vivid colors on the canvas in my mind in all of its unrivaled beauty.

Freshly engaged and excited to soak in every once of the surroundings, we trekked along the Southern Rim.  We made it roughly an hour before the exhaustion sunk in. With a whole day ahead of us, we set out in search of a worthy pick-me-up.  Stopping first at a nearby cafeteria, I poured myself a large cup of what was labeled, "coffee."  To call it coffee is a bit generous, but I won't go into any further detail, suffices to say it found its way down the nearest drain.

Ever the supportive companion, Kate made it her mission to find me a better cup.  "There's a restaurant up ahead, let's try there," she would say, tracing her finger across the travel map.  The early hour meant that most places were not yet open and my quest for a decent cup began to seem futile.  Until, finally, "Is that what I think it is?" I blurted out suddenly.  Outside a distant lodge was a sign whose words neither of us could make out, but in the middle was a green logo.

"It looks a bit like the Green Mountain Coffee logo," I said, with a glimmer of hope.  Closer still the logo came into perfect view, as did the words, "We proudly brew Green Mountain Coffee!"  And just like that, all was right with the world!

Sure, finding a great cup of coffee on the same morning Kate and I got engaged may sound trivial, but let me assure you it is not!  To say that moment in life could have been any more perfect is now, officially impossible!! From racing to make it in time for the first light to trace the outline of her face at the perfect moment, right down to the quest for a great cup of Joe, they all had a touch of drama and uncertainty.  But in the end, both could not have worked out any better.

A happy ending to a very happy beginning!

I gave a bag of coffee to a friend of mine as a housewarming gift. She took one look at it and said “Do you have anything that’s Fair Trade?”

I confess, before I started working for Green Mountain Coffee, I didn’t understand what Fair Trade (FT) meant exactly. Even when I settled on Fair Trade Organic Espresso as my coffee of choice, the fact that it’s Fair Trade had no impact on my decision whatsoever. But now that I know what it means and how it impacts the lives of those who grow our coffee beans, I get even more satisfaction out of my morning cup.

One category of coffee that’s exclusively Fair Trade is our Limited Edition Seasonal coffees. Four years ago, Green Mountain Coffee decided to make the seasonal coffees Fair Trade across the board. The idea was to grow awareness of Fair Trade to more coffee lovers like you so that we could expand our Fair Trade market and ultimately make a difference in more farmers’ lives. Why Seasonals? Well, I don’t know about you, but when I see “available for a limited time”, I’ve got to have it right now, and lots of it. What better way to introduce Fair Trade to as many people as possible who will not only anxiously await the next arrival, but will stock up? It’s true, even through our current economic situation, folks are ordering cases (yes, cases) of Fair Trade Pumpkin Spice before it’s gone. Maybe they’re depending on the aroma of mom’s pumpkin pie to get them through the tough times. Either way, it means coffee farmers are getting a better life.

What I love about the Seasonals is that, no matter what your reason, there’s a seasonal coffee that you can call your own. My second favorite coffee would have to be FT Organic Joyful Season Blend (available mid-November) because a) it’s Fair Trade; b) it’s organic; and c) I love the holidays. So much so, in fact, my Christmas tree stayed up until August one year. Apparently I have a problem with letting go. So if you’re wondering if I replaced the housewarming gift with a Fair Trade coffee …you betcha. If it helps coffee farmers survive, and thrive, in light of their long-standing economic troubles, shouldn’t everyone get Fair Trade?

Time to highlight another of our Fair Trade cooperatives, Chajulense cooperative in Guatemala.

In the rural highlands of Guatemala, you can tell where a woman lives by the patterns on her huipil, or traditional blouse.  The beautifully woven and embroidered motifs are unique to each community.  In a similar way, astute coffee lovers can discern a Guatemalan bean’s geographic provenance by the distinctive flavor and aroma patterns imparted by the soil, altitude, and rainfall of its environment.

Guatemala boasts eight distinct coffee-growing regions, each with its own personality and expression in the cup.  We source Guatemalan beans from coops in several regions, including Association Chajulense Val Vaq Quyol near the Chuchumatanes mountains of Chajul.  The name of this Fair Trade co-op means “only one voice,” and the co-op’s main goal is to improve the quality of life for its members while maintaining their traditions, values, and cultures. It is the largest organic coffee cooperative in Guatemala.

We’ve been working with Chajulense during the past three harvest cycles and are delighted by what we’ve tasted on the cupping table. On a recent trip to Guatemala, our chief coffee buyer, Lindsey Bolger, teamed up at the cupping table with cooperative President Arcadio Daniel Galindo and head cupper Arsemio Rivera Molina to identify beans that best displayed the unique qualities of coffee grown in regions around Chajul.  The cooperative’s prized Caturra and Bourbon varietals displayed shimmers of high-toned fruit, a vibrant acidity, and a resonant depth.

Fair Trade means the cooperative will receive a fair price for these excellent beans, and more. “Searching for a fairer market means not only that we will get better prices,” they write on their website, “but also that we are committed to work towards justice, freedom, and life for all men and women, so that we can live in justice among us and justice with our Mother Earth because only then we will achieve peace and happiness.”

Fair Trade Certified™ beans from the Chajulense cooperative are often used in Fair Trade Organic French Roast, Fair Trade Organic House Blend, and Heifer Hope Blend.
