Double Black Diamond Pudding Pie

If you ski, you might get the double meaning behind Green Mountain Coffee® Double Black Diamond coffee. You see, ski trails come with a rating system made up of colors and shapes so that you can pick a trail suited to your abilities. Double black diamond? Expert only, sir and madame.

A coffee named after that sort of exhilarating ride down a ski slope? You can bet it's got some danger behind its name. The Double Black Diamond Extra Bold coffee, I have to admit, is one step too dark for this recipe developer to drink on a random Tuesday. (I'm much more a Fair Trade Pumpkin Spice girl.) But that's okay, because it makes one heck of a dessert.

I don't know about you, but I'll take my caffeine any way I can get it. Pairing it with chocolate? I'm in. Pairing it with chocolate pudding? Doubly so.

You might imagine that as a recipe developer, there are quite a few leftovers around these parts. And that maybe we try to gift them to people as often as we can. All of that is true. Then there's Double Black Diamond Pudding Pie.

I tried to get my husband to take it to work. Begged even, knowing if it stayed here, we'd eat the whole thing between the two of us. He refused. Because he wanted to eat the whole thing between the two of us. It's that good.

Double Black Diamond Pudding Pie is one of the easiest desserts I've ever put together. It's a no-bake pie, which makes it especially great for the upcoming holiday season. A fantastic dessert that doesn't take up room in the oven, leaving plenty of room for your roast beef, roasting vegetables, and every other bit of the savory part of your meal.

I guarantee, when you present this pie to your guests at the end of a filling holiday meal, there may be some initial groans of fullness. Just one bite though, and they'll be wolfing it down.

Double Black Diamond Pudding Pie

Double Black Diamond Pudding Pie

makes one 9" pie

Ingredients

  • 1 3.8 oz box Devil's Food Instant Pudding mix
  • 1 cup heavy cream
  • 1 1/2 cups Green Mountain Coffee Double Black Diamond Extra Bold, cold and divided
  • 22 Newman's Own Creme Filled Chocolate Newman-O's Cookies
  • 22 Newman's Own Chocolate Creme Filled Chocolate Newman-O's Cookies
  • 1 8 oz tub frozen whipped topping, thawed or 2 cups heavy cream, whipped until fluffy with 3 tablespoons granulated sugar and 1 tablespoon vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips
  • cocoa powder for garnish (Optional)

Directions

  1. Brew a 12 oz cup of Double Black Diamond Extra Bold coffee and refrigerate until cold.
  2. When the coffee is sufficiently cooled, make the pudding: In a medium bowl, whisk together pudding mix, heavy cream and 8 oz (1 cup) cold coffee, leaving 1/2 cup coffee to the side.
  3. Whisk together until pudding solidifies, about 5 minutes, then refrigerate while you assemble the other ingredients.
  4. Line a 9" pie plate with 22 cookies. I used all vanilla cream filled on one layer and chocolate cream filled on another, but you are welcome to alternate if you wish.
  5. When the first layer of cookies is in the bottom of the pie plate, spoon a bit of cooled coffee over each one, taking care not to use all the coffee, as you will need it for the second layer of cookies too.
  6. Layer half of the pudding on top of the cookies.
  7. Place a second layer of 22 cookies on top of the pudding layer, then spoon coffee over each of these.
  8. Layer the rest of the pudding on top of these cookies, then place in the refrigerator for at least 20 minutes, covered with plastic wrap.
  9. When ready to serve, you can top with either frozen whipped topping that has been thawed, or homemade whipped cream. However, if you're using whipped cream, you must make sure the pie is going to be eaten the day you top it. If using whipped topping, the pie will last several days in the refrigerator, covered, and can be eaten over those days.
  10. Layer whipped cream or whipped topping over the pudding, then sprinkle with milk and semisweet chocolate chips (or stick to just one kind if that's all you have on hand), and garnish with cocoa powder.
  11. Serve immediately, or, if using whipped topping, you can make the pie at least a day in advance. The pie will only get better as it sits.

Last Minute Holiday Tips from Our K-Cup Ambassadors

With only a few days until Christmas, how’s the last minute planning and gift shopping going?  Are all the gifts wrapped and under the tree, or are you a bit frazzled and still trying to pull together menus, not to mention still struggling to figure out what to get that mother-in-law of yours? (Trust me: We're all there!)

To help out, we tapped into some of our K-Cup® Ambassadors to provide a few tips to help you check off some of those final tasks. 

  • Take a break.  Kelby of Type-A Parent says, “It is so easy to get caught up in your endless to-do list for the holidays (and unfortunately, holidays are on the calendar and come with a definite deadline). Take a break to do something holiday-related just for the sheer fun of it. Almost every town or city has some sort of holiday displays, events, festivals or even just holiday lights driving through neighborhoods. Take one day to just enjoy the holidays. Believe me, all the other stuff can wait one day (unless, perhaps, you are reading this on Christmas Eve). 
  • Do-ahead appetizers.  When planning appetizers, Amber of Bluebonnets & Brownies says to always include a few dips that can be made ahead of time, and quickly too, like this homemade salsa recipe. Throw some tortilla chips in a bowl, and you're ready to go. It's my mother's recipe, and I serve it at every party we host, no matter the time of year. It's always a hit, and it comes together in the food processor in about 3 minutes flat. Add to that, it can be made up to 3 days ahead of time, and the flavors only get better the longer it sits."
  • Hostess Gifts.  Julie from The Little Kitchen loves to give little gift baskets with coffee and cookies in them - or even a cute coffee mug with a little baggie with a sampling of your favorite K-Cup® packs and some homemade biscotti or cookies.
  • Take a “Me Moment”.  Kristen of Dine & Dish carves out a bit of “me” time each day. “I do that by sitting down to a cup of coffee. There is a reason coffee is hot… it’s meant to be sipped and savored, not rushed.  I use that 15 minutes in my day to get a grip on the day and it truly does work.”

Grand Reopening of the Visitor Center and Cafe!


This past Saturday we held the grand reopening of the Green Mountain Coffee® Visitors Center and Café - and what a great success it was!  All day long folks stopped by to check things out, see our revitalized space, and warm up (it was only 25-degrees out) with a steaming cup of coffee. Some lucky customers even walked away with great prizes including gift bags full of Green Mountain Coffee goodies (and even a Keurig® brewer or two).

We have to say: The Café staff did a spectacular job reopening the doors. Their friendly greetings and glowing faces really added to the enjoyment of the day. To say the least, we are so happy to see them back in action – particularly when they walked around with a selection of tasty treats was provided by Joan Grenier of Grenier’s Home Bakery.  Yum!


What’s a celebration without music?  Harwood Unions High School’s own a capella group, I Cantori, stopped by and captivated listeners with a selection of holiday favorites on the front porch. True professionals, the group sounded perfect - even in chilly temperatures!

Inspired by the occasion (and by the joyous music), Megan Smith, Vermont’s Commissioner of Tourism & Marketing, spoke about Waterbury and the importance of small towns in Vermont. Revitalizing Waterbury presented Ernie Pomerleau with a community services award for his work in Waterbury – thanks, Ernie!  Missy Gorham, the Café’s Manager, also got the chance to speak, sharing how very happy she is to be back in business after three months of hard work to get everything up and running again. Finally, the group raised their mugs in a toast to the Café staff, commemorating the reopening, the Visitor Center’s 5th year in business and Revitalizing Waterbury’s 20th year.


We are so fortunate to be part of a community that looks out for each other and rally when times get tough. We hope that the Café will continue to embody a sense of community spirit and that locals and visitors alike will come see us to enjoy a warm cup of coffee and the company of family and friends.

Fair Trade Also Means Better Quality in the Workplace

We can make a difference by taking our sense of taste and social responsibility to the office each morning.

Small businesses have substantial influence in their community, and when they adopt practices like supporting Fair Trade that advance the quality of life for their patrons, communities, and the environment, it makes a huge difference.

Here are a few suggestions for adding Fair Trade in your workplace, starting around the coffee station:



  • Ensure that your office coffee machine is brewing Fair Trade coffee. Also, encourage your employer to supply Fair Trade cocoa and tea, as well as Fair Trade chocolates as a snack during meetings or as an employee reward.

  • Post signs in the office break room or kitchen, preferably above the coffee maker, letting your coworkers know that the beverages they are drinking are supporting small-scale farmers.

  • Many organizations working on Fair Trade provide fact sheets and resources on their website. You can order informational materials or download them from organizations such as the Fair Trade Resource Network or Transfair USA. Several offer material you can print out and give to coworkers (maybe with a piece of Fair Trade chocolate as an incentive).

  • Use your company newsletter or blog to promote Fair Trade.

  • Ask for corporate donations to Fair Trade organizations.

  • Ask the businesses you support during the workweek to sell Fair Trade products. Don’t be intimidated; business owners really do value consumer feedback.

  • Let your local merchants know you value the Fair Trade items they sell, and ask them to stock any you’d like to purchase.

  • Encourage your business to advocate for making your town a “Fair Trade Town” — a community that makes a commitment to supporting Fair Trade. Lead the way!

  • Exchange Fair Trade gifts with coworkers during the holidays.

I’m know I’m not alone in the world when I admit I’m not a huge fan of the holidays. I wouldn’t consider myself a “Scrooge”, and I actually enjoy the gift giving aspect of the holidays. Fair Trade Certified LabelNow that you know what Fair Trade is all about, what can you do about supporting fair trade in your daily life? Yes, daily life: the time when Fair Trade blogs, quizzes, and month long celebrations are not running rampant on your computer screen.

You can start with food items, since that’s a habit that’s not going anywhere anytime soon. Many fair trade foods available these days in your grocery store – just look for the Fair Trade Certified™ label. Coffee of course is at the top of the list as well as tea. For those with a sweet tooth (AKA me) there are quite a few fair trade options for chocolate bars and cocoa. In general, healthy food markets and Coop’s will have a wider range of Fair Trade food products including rice, sugar, and fruit in addition to coffee, tea and cocoa. I gave a bag of coffee to a friend of mine as a housewarming gift. She took one look at it and said “Do you have anything that’s Fair Trade?”

I confess, before I started working for Green Mountain Coffee, I didn’t understand what Fair Trade (FT) meant exactly. Even when I settled on Fair Trade Organic Espresso as my coffee of choice, the fact that it’s Fair Trade had no impact on my decision whatsoever. But now that I know what it means and how it impacts the lives of those who grow our coffee beans, I get even more satisfaction out of my morning cup.

One category of coffee that’s exclusively Fair Trade is our Limited Edition Seasonal coffees. Four years ago, Green Mountain Coffee decided to make the seasonal coffees Fair Trade across the board. The idea was to grow awareness of Fair Trade to more coffee lovers like you so that we could expand our Fair Trade market and ultimately make a difference in more farmers’ lives. Why Seasonals? Well, I don’t know about you, but when I see “available for a limited time”, I’ve got to have it right now, and lots of it. What better way to introduce Fair Trade to as many people as possible who will not only anxiously await the next arrival, but will stock up? It’s true, even through our current economic situation, folks are ordering cases (yes, cases) of Fair Trade Pumpkin Spice before it’s gone. Maybe they’re depending on the aroma of mom’s pumpkin pie to get them through the tough times. Either way, it means coffee farmers are getting a better life.

What I love about the Seasonals is that, no matter what your reason, there’s a seasonal coffee that you can call your own. My second favorite coffee would have to be FT Organic Joyful Season Blend (available mid-November) because a) it’s Fair Trade; b) it’s organic; and c) I love the holidays. So much so, in fact, my Christmas tree stayed up until August one year. Apparently I have a problem with letting go. So if you’re wondering if I replaced the housewarming gift with a Fair Trade coffee …you betcha. If it helps coffee farmers survive, and thrive, in light of their long-standing economic troubles, shouldn’t everyone get Fair Trade?

Ways to Support Fair Trade in Your Town

While doing research for this post I found a great option for supporting the fair trade model here in New England. Red Tomato is a non-profit organization based in Massachusetts that sources produce from family farms in the northeast and southeast for distribution in New England grocery stores. Red Tomato defines itself as being “at the forefront of efforts to build a Domestic fair trade movement, applying principles of fair trade to support farmers in the US.” Go to http://www.redtomato.org/products.html for a list of available products and participating grocery stores.
