Caramel Mocha Latte Recipe

To celebrate National Chocolate Caramel Day today, let us indulge in all that is wonderful about the combination of heavenly chocolate and the sugary, sweetness of caramel.

Caramel Mocha Latte Recipe! Enter as you dare...



1 Extra Bold Coffee K-Cup® or Vue® pack 

4 oz. of skim milk

4 teaspoons of caramel syrup or caramel ice cream topping

1 tablespoon of chocolate syrup



Brew 6-8 oz. of coffee into a 14 oz. mug

While the coffee is brewing, prepare the hot milk in your Milk Frother

When coffee is ready, add 4 teaspoons of caramel syrup or topping

Stir in 1 tablespoon of chocolate syrup. 

Gently stir in hot milk 

Recommendation: Topped with whipped cream. 






Big Easy Beignet Dipping Sauce


In light of fat Tuesday, here’s a recipe to make you feel like you’re parading down Bourbon Street. An inspired coffee-cream dipping sauce, perfect for dipping homemade donuts, ladyfingers and beignets!



3/4 cup mascarpone cheese (room temperature)

6-8 tablespoons Dark roast coffee (to stick with the New Orleans theme I used Emeril’s® Big Easy Bold K-Cup® Coffee)

2 tablespoons powdered sugar

1/4 cup heavy cream



Allow mascarpone cheese to reach room temperature. 

Brew coffee at the 2-oz setting in your Keurig® brewer. 

Whip together ingredients in a standing mixer, or with a hand mixer on low speed until the desired consistency is reached, then serve in a small bowl. Dip, and enjoy!

Let’s Get Organized!

Did you know last Friday kicked off National Get Organized Week? I’m sure you knew, if it was displayed at your desktop, on a sticky note in your planner, or typed into your I-phone calendar. You get the idea.

It’s no surprise that each year seems to get busier and busier in our lives, from our hectic schedules at work or school, to making time with family and friends. The pace of our lives never ceases to amaze. And so, it is relieving to know there is one week in the year that is actually scheduled to ‘get organized’. What better way than the midst of the school year and fall season to learn a few tricks and tips for order and organization in our lives. So here are my top 5 tips to getting organized. Maybe you’ll find yourself trying a few out in your jam-packed day:

  1. Make lists. I am a big list maker and let me tell you, it does wonders. We do not realize sometimes that with such a long laundry list of to-do’s, if we do not actually write down what we need to get done, things may just slip between our fingers.. Sticky notes should be your best friend! Have fun with it by picking out neon stationary and different shapes and sizes to really stand out and will not be lost at your desk or on the kitchen fridge.
  2. Spring clean. Fall, Winter, & Summer, too! Although it is such a breath of fresh air to get out those lemon-infused cleaners and make our windows shine that beautiful day in May, ultimate cleaning should not be saved just for spring. Make sure you’re always refreshing your space, whether it’s re-decorating your study in your house or changing out your plain white towels for a pop of orange in the bathroom this fall! Even going through your closet every month –I know! – will help in your domination of organization! Any type of face-lift, however big or small, can definitely get you on the track of organization and a sense of zen.
  3. Store and put it away. For good. It’s always hard to let go of things that we may not necessarily need and that step of actually letting go is tough, trust me.  However, once you actually ask yourself when you last used a certain item, whether at home or at your office desk, it will be that much easier to cope with the loss and move on. Declutter space, even a little at a time.
  4. Stay calm! Overwhelming yourself will not help in organizing your day-to-day life. Try tackling one task at a time and you will be able to conquer all. Try sipping on a cup of Bigelow Green Tea, using your Keurig® brewer, while preparing to power through your organizational skills. 
  5. Make it fun! Coffee Braised Short Ribs Recipe


The word you’re looking for is tender, my friends.  Succulent.  Juicy.  Melt-in-your-mouth, shut-the-front-door, where-have-you-been-all-my-life? tender.   At least, that’s what our tasting crew here on the blog came up with to describe these coffee braised short ribs.  Give this recipe a try with Coffee People® Black Tiger coffee for an extra stripe of earthy flavor. Bold Coffee. Bold Personality.  Bold (tender) ribs. Eat on.

Coffee Braised Short Ribs

Serves 6


  • 4 lbs. short ribs
  • Salt and freshly ground black pepper
  • 1 Tablespoon vegetable oil
  • 1 large yellow onion, thinly sliced
  • 2 carrots, peeled and finely chopped
  • 2 Tablespoons tomato paste
  • 1 cup red wine
  • 1 Extra Bold Coffee K-Cup® or Vue® pack, brewed at 8-oz. setting


Preheat oven to 325° F. Season short ribs with salt and pepper.  Heat Dutch oven large enough to hold all the ribs in one layer over medium-high heat.  Add oil; when warm, add ribs a few at a time and brown on all sides.  Transfer ribs to plate.

Remove all but 1 Tablespoon of rendered fat from the Dutch oven.  Add onions and carrots and cook for 5-minutes over medium-low heat, stirring occasionally. Add tomato paste and cook 1-minute, stirring.  Pour wine and coffee into the Dutch oven.  Cook over high heat, scrapping up brown bits on the bottom of the Dutch oven, for 1-minute.  Return ribs to the Dutch oven.  Note that ribs will not be completely covered with liquid.

Transfer Dutch oven to preheated over.  Cook until ribs are tender, for about 2 ½ hours.  Turn ribs over halfway through cooking time. Uncover and cook until ribs fall apart, about 30-minutes more. 

Strain sauce into heatproof measuring cup and skim off fat.  Serve ribs with sauce.

If you ski, you might get the double meaning behind Green Mountain Coffee® Double Black Diamond coffee. You see, ski trails come with a rating system made up of colors and shapes so that you can pick a trail suited to your abilities. Double black diamond? Expert only, sir and madame.

A coffee named after that sort of exhilarating ride down a ski slope? You can bet it's got some danger behind its name. The Double Black Diamond Extra Bold coffee, I have to admit, is one step too dark for this recipe developer to drink on a random Tuesday. (I'm much more a Fair Trade Pumpkin Spice girl.) But that's okay, because it makes one heck of a dessert.

I don't know about you, but I'll take my caffeine any way I can get it. Pairing it with chocolate? I'm in. Pairing it with chocolate pudding? Doubly so.

You might imagine that as a recipe developer, there are quite a few leftovers around these parts. And that maybe we try to gift them to people as often as we can. All of that is true. Then there's Double Black Diamond Pudding Pie.

I tried to get my husband to take it to work. Begged even, knowing if it stayed here, we'd eat the whole thing between the two of us. He refused. Because he wanted to eat the whole thing between the two of us. It's that good.

Double Black Diamond Pudding Pie is one of the easiest desserts I've ever put together. It's a no-bake pie, which makes it especially great for the upcoming holiday season. A fantastic dessert that doesn't take up room in the oven, leaving plenty of room for your roast beef, roasting vegetables, and every other bit of the savory part of your meal.

I guarantee, when you present this pie to your guests at the end of a filling holiday meal, there may be some initial groans of fullness. Just one bite though, and they'll be wolfing it down.

Double Black Diamond Pudding Pie

Double Black Diamond Pudding Pie

makes one 9" pie


  • 1 3.8 oz box Devil's Food Instant Pudding mix
  • 1 cup heavy cream
  • 1 1/2 cups Green Mountain Coffee Double Black Diamond Extra Bold, cold and divided
  • 22 Newman's Own Creme Filled Chocolate Newman-O's Cookies
  • 22 Newman's Own Chocolate Creme Filled Chocolate Newman-O's Cookies
  • 1 8 oz tub frozen whipped topping, thawed or 2 cups heavy cream, whipped until fluffy with 3 tablespoons granulated sugar and 1 tablespoon vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips
  • cocoa powder for garnish (Optional)


  1. Brew a 12 oz cup of Double Black Diamond Extra Bold coffee and refrigerate until cold.
  2. When the coffee is sufficiently cooled, make the pudding: In a medium bowl, whisk together pudding mix, heavy cream and 8 oz (1 cup) cold coffee, leaving 1/2 cup coffee to the side.
  3. Whisk together until pudding solidifies, about 5 minutes, then refrigerate while you assemble the other ingredients.
  4. Line a 9" pie plate with 22 cookies. I used all vanilla cream filled on one layer and chocolate cream filled on another, but you are welcome to alternate if you wish.
  5. When the first layer of cookies is in the bottom of the pie plate, spoon a bit of cooled coffee over each one, taking care not to use all the coffee, as you will need it for the second layer of cookies too.
  6. Layer half of the pudding on top of the cookies.
  7. Place a second layer of 22 cookies on top of the pudding layer, then spoon coffee over each of these.
  8. Layer the rest of the pudding on top of these cookies, then place in the refrigerator for at least 20 minutes, covered with plastic wrap.
  9. When ready to serve, you can top with either frozen whipped topping that has been thawed, or homemade whipped cream. However, if you're using whipped cream, you must make sure the pie is going to be eaten the day you top it. If using whipped topping, the pie will last several days in the refrigerator, covered, and can be eaten over those days.
  10. Layer whipped cream or whipped topping over the pudding, then sprinkle with milk and semisweet chocolate chips (or stick to just one kind if that's all you have on hand), and garnish with cocoa powder.
  11. Serve immediately, or, if using whipped topping, you can make the pie at least a day in advance. The pie will only get better as it sits.

And fresh…beets?  Yes, the combination may sound odd, but when they win the Best Signature coffee drink award in the 2009 Italian Barista Championship you know there’s something to it.  The presentation alone is noteworthy - a striking fuchsia with a stunning bullseye – but the flavor – a balance of smoky Barista Prima Coffeehouse® French Roast, tart ricotta, and bright sweetness of the beets - makes this a favorite treat for coffee connoisseurs.  Make this recipe for your next brunch and see their eyes widen and their mouths ask for more.


Caffé Rouge

Serves 5


-       3.5 oz small red beets

-       Pinch of salt

-       1/2 cup heavy cream, divided

-       1 teaspoons confectioner’s sugar

-       1/8 teaspoon vanilla

-       4 oz (1/2 cup) ricotta cheese

-       3 tablespoons granulated sugar

-       1/4 cup milk

-       1 Barista Prima Coffeehouse® French Roast K-Cup® or Vue® pack



  1. Peel beets and trim ends. If using larger beets, cut into ¾" pieces. Place beets in a steamer and sprinkle lightly with just a pinch of salt.
  2. Steam beats over simmering water for 35-45 minutes, until very soft. Chill beets in the refrigerator at least 1 hour.
  3. To make Chantilly cream, combine 1/4 cup of cream, confectioner's sugar and vanilla in a small bowl. Whip until slightly thickened, but before any soft peaks form. Chill until ready to use.
  4. Combine cooked beets, ricotta cheese, granulated sugar, milk and remaining cream in a blender. Puree until completely smooth. The mixture should be easily pourable. Add more milk and cream in equal measure if mixture is too thick to pour.
  5. Set out 5 6oz glasses. Pour ¼ cup beet cream mixture in to each glass. Spoon in 2 tablespoons Chantilly cream in the center of each glass.
  6. Brew Barista Prima® French Roast into a glass measuring cup.
  7. Very slowly pour about 3 tablespoons coffee in the middle of each cream circle.
  8. Serve immediately.

Tricky Barbecue Sauce with Nantucket Blend Iced Coffee

May I present you with two delicious, award-winning, and caffeinated recipes to spice up your Labor Day cookout?  Developed by our very own pitmaster Derek from Flatlander BBQ, the Tricky Barbeque sauce graced his third place ribs entry at the Safeway Barbeque Battle in 2011.  The Jalapeno-Coffee Barbeque Sauce is a house favorite – sweet with an extra bold kick thanks to the Nantucket Blend Iced Coffee in the ingredient list! Drag one of these beauties across your chicken, ribs, or burgers this weekend and your mouth will thank you again and again. 

Tricky Barbecue Sauce


2 tablespoons grainy Dijon mustard (Fox Meadow Farm 3-Peppercorn Dijon from Vermont)

2 tablespoons yellow mustard (Vermont Maple Mustard from Fox Meadow Farm)

1 cup cider vinegar

¼ cup low sodium soy sauce

¼ cup regular soy sauce

2 cups ketchup

2 cups honey (Champlain Valley Apiaries Honey)

1 Green Mountain Coffee® Nantucket Iced Coffee K-Cup® or Vue® pack, brewed on 6oz setting without ice

3 tablespoons Worcestershire sauce

1 tablespoon paprika

1 tablespoon + 1 teaspoon maple sugar (OR 2 tablespoons + 2 teaspoons maple syrup)

½ teaspoon garlic powder

½ teaspoon Chinese five spice powder

¼ teaspoon ancho chili powder


Combine all ingredients in a medium sauce pan and bring to a light boil.  Boil while continuously stirring for about 15 minutes, or until thickened. 


Jalapeno-Coffee BBQ Sauce with Nantucket Blend Iced Coffee

Jalapeno-Coffee Barbecue Sauce


2 Green Mountain Coffee® Nantucket Blend Iced Coffee K-Cup® or Vue® pack, each brewed on 4oz setting

1 cup ketchup

¼ cup molasses

2 tablespoons orange juice

2 tablespoons cider vinegar

2 teaspoons Worcestershire sauce

2 teaspoons Dijon mustard

2 jalapeno peppers, pierced all over with a fork

3 shots hot sauce


In a medium saucepan, combine all ingredients except hot sauce.  Cook, stirring frequently, over low heat until slightly thickened, 10 to 15 minutes

Remove from heat and let cool.  Discard peppers and season with hot sauce to taste.

An ode to coffee-fueled family game nights

Despite the fact that I am a 23-year-old college graduate, I can't deny the fact I still possess a boyish love of games. Throughout my undergraduate career, my friends and I tore through just about every board and card game in the book during our weekly family game night (which we lovingly abbreviated to FGN) - Monopoly, Sorry, Uno, Risk, The Game of Life, Scrabble, Blockus and Taboo among many more. We even developed our own official/unofficial FGN rulebook in order to settle the inevitable disputes that would arise among our extremely competitive group of friends.

I bring up this particular aspect of my life because I recently got together with my remaining group of college friends to breathe some new life into the old FGN. We dusted off the Monopoly board and instantly it was like a junior year Wednesday night all over again. We started snatching up properties like it was going out of style.

I have to say, even though it wasn't the exact same crew that we had back in the day, it was great to reconnect in the name of  family game night. Before long, the same semi-good natured arguments had broken out, the old jokes were being relived (like when my friend Carlo famously threw Taboo across the room and stormed out of the apartment) and the refreshments were flowing free.

In fact, one of the most memorable aspects that reappeared during our update on FGN was brewing lots and lots of coffee. Back in college, family game night often crossed the midnight mark into the wee hours of the morning, so we made sure to keep our Keurig® brewer handy at all times. This time was no different - I was prepared with several Green Mountain Coffee® K-Cup® packs of Dark Magic® Extra Bold, French Roast and Colombian Fair Trade Select so that we could all get our favorite caffeine fixes.

And wouldn't you know, the rebirth of FGN once again crossed into familiar late night territory. Ask the Coffee Lab: Coffee Pairing

I always hear about pairing coffees with certain things.  Do some coffees taste better with certain foods?


I was at a lecture years ago with the great Ken Davids, coffee genius, and he said he thought that people sort of over-did the  whole idea of pairing coffee with food and they end up feeling locked in and not being creative and spontaneous. That said, he thought that heavy foods went better with heavier coffees (like Dark Magic® or any of the extra bold coffees) and lighter food should go with lighter coffees. That should give you some broad ranges to work in, right? According to Ken, coffee works best with desserts.

That same conference, I attended another lecture by Timothy James Castle, a foodie and writer. He thought that were two best ways to pair: Contrast and resonance. Here are some examples right from my notes:

  • Dark chocolate goes with acid-y coffees like Guatemalans

  • Milk chocolate goes with  Sumatrans or Konas

  • Chicken Curry goes with a light roast coffee

  • Ribeye steak goes with dark roast Sumatran

  • Fruit compote goes high acid coffees

My favorite coffee and food pairing is taking a fresh cider donut and dipped into a cappuccino. It’s not exactly fine dining, but try it.  What do you like to pair?  So go forth and be creative and tell us what you find!

A few months ago, as the Green Mountain Coffee and the Brew Over Ice teams were ironing out a schedule for our current sampling tour, it was decided that we couldn't pass up the opportunity for Brew Over Ice to sponsor the Safeway Barbeque Battle in Washington, D.C..  This is one of the top barbeque events of the summer, shutting down Pennsylvania Avenue with games, music, and lots and lots of barbeque.  Perfect for iced coffee and iced tea, right?  As excited discussion around the event ensued, it surfaced that Derek, Green Mountain Coffee brand manager, is a certified Kansas City Barbeque Society (KCBS) competition judge.  It turns out that not only is he a judge, but at the time Derek was finalizing plans to enter a team in various BBQ competitions around New England.  We put two and two together, and decided to enter our own team for the D.C. event, and compete alongside some of the most decorated teams on the competitive BBQ circuit.

Now it’s time to put our BBQ where our mouth is.

So, at the end of this very week, members of the Brew Over Ice and Green Mountain Coffee teams are traveling to our nation’s capitol to take part in this exciting contest on June 25th and 26th.  Derek, who moved to Vermont from Rhode Island by way of Massachusetts several years ago, lovingly dubbed his team “Flatlander BBQ, playing off the word that Vermonters tend to call folks from outside of the Green Mountain state.

Technically, the Flatlander team consists of Derek and his wife Meghan, but for this weekend’s event, the team will temporarily expand to Extra Bold levels to include Kristen from Public Relations, Chris from Brew Over Ice, and Tyler and Roger from the Green Mountain Coffee team.  Together we're competing in all four competition categories – chicken, beef, pork ribs, and pork shoulder (for pulled pork).  We are also entering the “America’s Best Sauce Contest” to really put it over the top.

We hope to add to Flatlander’s recent success (Derek and Meghan took second place for pork and fifth place for chicken at the recent Cape Cod BBQ contest) by utilizing the special rubs and recipes that Derek concocted … oh, and did I mention that all of our entries will feature our bagged coffee and/or tea from Brew Over Ice K-Cup® portion packs? For additional authenticity, we will even be going so far as to use green coffee beans in the smokers, hopefully imparting the winning essence for all our entries.

Where’s my Fair Trade Organic Espresso Blend?

What is happening to all of the Fair Trade K-cups, I heard they are being discontinued? -Karen


Good news: Our Fair Trade K-Cups are not being discontinued.  Right now, Fair Trade and Organic certified and Colombian green bean supply is low due to weather conditions in Latin America and other unexpected circumstances, so we’re temporarily cutting back on a few blends until supply is up again.

Since we learned of this shortage, our coffee team has been working hard to identify and purchase as much of a supply of Fair Trade and Organic certified green coffee as possible.  This situation only galvanizes our commitment to the development of more certified farms to ensure that farmers live a better life and that you can get the double certified coffees you love.

The great news is that since our team has been working on this night and day, we expect that these coffees should be back in stock come late spring of this year.  In the meantime, we do have some suggestions to get you through until your favorite Fair Trade Espresso Blend or Fair Trade Organic Vanilla Cream returns:

Many of you know, we have discontinued our Green Mountain Coffee Extra Bold 10% Kona Blend.  We’re sad to do it – it’s a wonderful coffee and a favorite of many – but unexpected circumstances were not kind to Kona this year.

As you may have heard, coffee crop yields from Kona are down 50% due to natural crop cycles and unusually dry weather. This significant shortage has forced coffee roasters across the country to make changes to their Kona offerings, which, in our case, means discontinuing our Kona coffees.

We can’t tell the future, so we don’t know when/if 10% Kona will return.  But be sure of the fact that we are keeping an eye on news around the Kona crop and will be sure to blog again if anything changes.

In the mean time, our coffee team recommends that Green Mountain Coffee Breakfast Blend or Extra Bold Kenyan AA may fit your Kona tastes.

So, Why Are Seasonal Coffee Blends Not Available in K-Cups?

Over the past few months, many of you have responded to our blog posts about the return of your favorite seasonal coffees, asking why our seasonal blends have been retired from the the K-Cup® Portion-Pack line-up.

Trust us: It was not an easy decision to make.  We know how much some of you love these blends and brewing them in your Keurig® brewer, so the retirement was not one we took lightly.

Discontinuing items from our product lines not new -- as a company, it's standard practice for us to evaluate our products' performance to see how well they're doing, for better or for worse.  At a recent review of our Seasonal coffees, it was shown that the Flavored Seasonal coffees in K-Cups outselling the Seasonal Blends in K-Cups 4 to 1.  We also saw that Seasonal bagged coffees are strong overall, for both flavors and blends.

It's never easy to have to break news like this to our customers--we realize that decisions like this can be disappointing to those who develop a fondness for the products that are discontinued.

But there is are a few options for those of you who adored our Seasonal Blends in K-Cups.  First, Seasonal Blends are still available in bags - so you can pick up at My K-Cup adapter and still brew your favorite.  Second, while the Seasonal Blends are no longer available in K-Cups, our coffee team has worked to find some great recommendations of other coffee blends that you may enjoy:
